Abstract

Abstract- Religion significantly influences dietary habits, particularly in Islam, where Ramadan alters food consumption from day to night. Traditional foods, developed over generations, adapt to cultural values and food insecurities. In Hyderabad, renowned for its rich culinary heritage, Hyderabadi cuisine blends Mughlai, Turkish, and native influences, with biryani being a standout dish. During Ramadan, food preferences shift towards traditional delights like biryani and kebabs, reflecting the spiritual significance of the month. Additionally, carbohydrate counting plays a vital role in managing health issues such as obesity and PCOS by promoting glycemic control and healthier eating habits. The study reveals that in the local traditional foods of Hyderabad the carbohydrate content ranges from 0.16g - 22.08g per serving i.e., 30gm. The foods containing refined wheat flour (Maida) as a major ingredient has the highest carbohydrate content followed by gram flour (chickpea) having greater carbohydrate proportion.
