Abstract

Introduction The growing demand for natural, minimally processed, and nutrient-dense foods has increased interest in functional food products. Date peanut butter is a novel value-added spread that combines the natural sweetness and energy of dates with the protein and healthy fats of peanuts. The inclusion of different variations such as sesame paste, cocoa, and millet-based additives enhances its nutritional profile, taste, and consumer acceptability. This study was undertaken to develop, standardize, and evaluate date peanut butter and its selected variations for nutritional quality, sensory acceptability, and shelf life. Methodology Raw materials including dates, peanuts, and selected variation ingredients were procured, cleaned, roasted, and processed under hygienic conditions. Multiple formulations of date peanut butter and its variations were developed and standardized using sensory evaluation with a 9-point hedonic scale. The most acceptable variations were subjected to proximate nutritional analysis for energy, protein, fat, carbohydrate, fiber, iron, and calcium using standard laboratory procedures. Shelf-life studies and microbial analysis were conducted to determine product safety and storage stability. Results The standardized date peanut butter and its variations showed high sensory acceptability in terms of taste, texture, aroma, and overall appearance. Nutritional analysis revealed that the product was energy-dense, rich in protein, healthy fats, dietary fiber, and essential minerals, particularly iron and calcium. Variations such as sesame-enriched date peanut butter showed enhanced mineral and antioxidant content. Shelf-life studies confirmed that the product remained microbiologically safe and organoleptically acceptable for a defined storage period under ambient conditions. Conclusion The study concludes that date peanut butter and its variations are nutritious, safe, cost-effective, and highly acceptable functional food products. They serve as healthier alternatives to commercial sugar-loaded spreads and have strong potential for commercialization. The product is suitable for all age groups and can be especially beneficial for children, adolescents, athletes, and individuals with increased nutritional needs.
