Fungi in various types and forms has been a part of human diet for thousands of years. Today, filamentous fungi are widely used as cell factories in the pharmaceutical, food and beverage industries. The fungal biomass itself is also a valuable product for food as a rich protein source for humans. This review outlines the microfungi used and their respective fermentation production methods. The review focuses on small-scale microfungi production studies using a range of medium and carbon sources.
